Carole A. Ellis, 79, passed away peacefully on September 7th, 2023 in Arlington, Texas with family by her side after a short battle with cancer. She was born on July 15, 1944 in Chicago, Illinois to Joseph Frank Galbavy, and Helen Marie (Diskoviak) Galbavy.
Carole grew up in Chicago, Illinois and she graduated from Harrison High School in Chicago, Illinois in 1962. After high school she worked for the IRS and Treasurer’s Office where she developed an interest in accounting. She attended Morton College in Cicero, Illinois where she received a degree in accounting. In 1982 she moved with her family to Arlington, Texas and began working for the University of Texas in Arlington bookstore as an accountant. In 1996, she transferred to the University of Texas Southwestern Medical Center and continued to work in the accounting department until her retirement in 2007. After retirement she enjoyed traveling throughout Europe, Canada and the US with her husband.
Carole married Maynard B. Ellis, Jr. in 1981 in Chicago, Illinois and they were happily married for 42 years. In 1982 their daughter, Cynthia (Cindy) was born. Carole enjoyed cooking, baking, reading, traveling, visiting friends, working on her coin collection and playing her favorite game BINGO. Carole had a passion for supporting humanitarian efforts. She took pride in collecting clothing, food and supplies for those in need and donating to organizations that helped the health and welfare of those in need. Her favorite activity of all was to spend time with her grandchildren baking, making crafts and watching them play. Carole attended St. Peter and St. Paul Anglican Church in Arlington, Texas.
Carole was preceded in death by her husband Maynard B. Ellis, Jr., parents Joseph Frank Galbavy and Helen Marie Galbavy, and sister Karen Galbavy.
Carole is survived by her daughter Cynthia (Stephen) Mate, of Euless, Texas; sister Joyce (Theodore) Callis of Chicago, Illinois; grandchildren Chelsea and Carson Mate, nephews James (Courtney) Callis and Michael Callis, great-nieces Avrey, Dana, Hanna and Helaina Callis, great-nephew Spencer Callis and many other relatives that loved her.
A memorial service will be held at Emerald Hills Funeral Home & Memorial Park 500 Kennedale-Sublett Rd. Kennedale, TX 76060 on Thursday, September 14th, 2023. Visitation will be held at Emerald Hills from 12 pm to 2 pm with a chapel service to immediately follow.
In lieu of flowers the family requests memorial donations be made to a charity of your choice in Carole’s name. Condolences may be left on the Carole A. Ellis online guest book.
